Huevos Rancheros



Huevos Rancheros

1 can of organic, diced tomatoes
4-5 eggs
1 diced bell pepper
1/4 onion, diced
2-3 cloves garlic
Cilantro
Cheese (cheddar)
Olive oil


1. Heat small amount of olive oil in a deep skillet.
2. Put tomatoes (with juice) in food processor and whir until smaller.
3. Dice garlic cloves, onion and bell pepper and sauté in skillet until onions are translucent. Season with salt and pepper.
4. Add the tomato mixture into skillet.
5. Once contents are almost to boiling, crack eggs carefully deep into the tomatoes- from here they will be poached,
6. Cover with lid until eggs reach desired firmness, season with salt and pepper.
7. Sprinkle with cilantro and cheese.


Serving ideas:

Huevos Rancheros are great alone, or served in a heartier full meal. Our favorite way to eat Huevos Rancheros is on a lightly toasted corn tortilla, black beans and topped with sliced avocados.
